this will cause all cPanel to wipe out so maybe it will be easily to just stop cPanel process itself? Also why you're thinking that it is so easy to hack cPanel php?

If you disable cPanel's php it may not work properly.

CPanel is written in Perl mostly. Its probably not a good idea to mess with CPanel files unless you completely disable it all together. If you're talking about CPanel's PHP support on hosted sites, why not just recompile easy apache without PHP support?

Disable expose_php for security reasons expose_php = Off Setting expose_php to Off in php.ini does not prevent or stop php_info() function from executing.

You can disable php functions inside php.ini as follows.
